Previously Videre Restaurant, the spectacular venue located on the 21st floor of RACV Royal Pines Resort, has been transformed into a High Tea lounge with some of the best city skyline views on the Gold Coast.
In addition to the iconic views,RACV Royal Pines Resort’s newest addition will deliver a contemporary and sophisticated interpretation of the classic High Tea experience with a uniquely Australian flavour.
RACV Executive Chef, Glenn Bacon has created a playful menu that pays homage to classic high tea fare with a few delicious, modern Australian twists.
So gather the squad for a day of pinky-pointing and your choice of three High Tea menus including the Signature, Sparkling or Champagne starting from $45 per person.
The menu features delicacies such as a smoked salmon, quandong and cucumber club, Camel milk feta quiche, Medjool date and honeycomb scones served with Meander Valley pure double cream and house-made blackberry and strawberry gum jam; alongside scrumptious sweets like the Granny Smith apple and macadamia bomb, passionfruit meringue and Rosella craquelin choux bun.
“The menu will change each season”, says Chef. “However the one constant will be our use of indigenous Australian ingredients”.
“Ever since my days working in Alice Springs back in the 90’s, I have made a point of using native ingredients in a lot of my dishes. As a proud Australian chef, I feel privileged to be able to source and showcase such unique ingredients to our guests”, Chef explains.
“Wattle is a great example of an indigenous ingredient that has a really interesting flavour profile, similar to that of toasted coffee, it can be used in so many applications. Riberry, Quongdong and Strawberry Gum are also among some of my favourites as these types of ingredients lend themselves to both sweet and savoury applications”.
“This season we are also showcasing Camel milk Persian-style feta cheese in our quiche and presenting it with a hazelnut granola. The Summer Land Camels Dairy at Harrisville in Queensland are producing some really interesting soft cheeses”,Chefs says.
“Camel milk has 25% less fat and 25% less lactose than cow’s milk. It is higher in Potassium, Magnesium, Copper, Iron, Zinc and Sodium and it’s lower in cholesterol. It also has naturally occurring antibacterial and antiviral properties”.
However the Videre High Tea menu is not all scones and quiches! The hearty spread of dishes also features a moreish hot and crispy buttermilk chicken slider topped with a citrus burst of lemon myrtle mayo and served atop a charcoal bun that’s sure to become a seasonal mainstay!
Of course, no Videre High Tea experience is complete without a generous pour of unlimited Tea Drop tea and French press coffee served by classic trolley service – veryla-di-da! And, depending on how luscious you’re feeling, you can also select to include a glass of NV Paul Louis Blanc de Blanc sparkling or NV Champagne Laurent-Perrier La Cuvee with your High Tea menu.
